Easy Coconut Banana Walnut Pancakes with Crème Fraîche


The weather this weekend was little up and down. Sunny and warm on Saturday, then a complete downpour on Sunday. When it’s cold and wet outside, I get a little depressed and stay in, so I decided to make something in the kitchen. I hopped on over to Trader Joes and rather than spending the entire day messing up the kitchen, I bought a box mix which cuts my time in half. It turned out sooo good and reminded me of the banana walnut pancakes at the Griddle in LA. This is definitely not something we partake in every Sunday, but once in a while, it’s nice to indulge 🙂


2 cups of Trader Joe’s toasted coconut pancake mix: Available here
1 1/4 cups of water
2 Bananas
1 cup of chopped walnuts
Bourbon maple syrup: Available here
Dollop of Crème Fraîche
Few squirts of lemon (optional)
Few pieces of butter (optional)

Chop or slice bananas depending on personal preference. In a medium bowl, mix together pancake mix and water. Add bananas and chopped walnuts. Turn stove on to medium-low heat, with a ladle scoop batter onto griddle and wait 1-2 mins. With a spatula, loosen bottom of pancake before flipping over to cook other side.

Sprinkle with more bananas and walnuts, add a crème fraîche and lemon 🙂
